Budae-jjigae Street preserves a history of postwar food and livelihood

Uijeongbu budae-jjigae emerged from postwar scarcity and the economy around US bases, combining processed meats with Korean seasonings, kimchi and noodles. Claims that one person invented it on one exact day should be separated from the broader history preserved through oral accounts. Romanticising improvisation can hide poverty, unequal access to supplies and the labor—often women’s labor—that turned ingredients into family income. Today the street is a festival and regional brand, but restaurants have different founders, recipes and ingredient origins. Check labels, allergies and business histories, respect diners when photographing, and read the dish as a connection among war, informal distribution, market work and modern tourism.
